Chef Nigel

Executive Chef Nigel Mitchel, winner of the prestigious James Beard award and numerous others, has lead the exceptional culinary team at Ladera for over 20 years. A native of St. Lucia, Chef Nigel creates modern, seasonal interpretations of St. Lucian classics. He makes all breads, pastas and ice-creams served at Ladera, from scratch, in-house. Savor deliciously innovative dishes such as: sweet potato and coconut soup, Caribbean lamb salad, roast conch with pickled vegetables served in a yam basket, Cajun creole vegetable bakes and plantain gratin with a coconut rum sauce. Most evenings you can find Chef Nigel sharing the stories behind his food with guests at Dasheene.

Farm to table

Ladera specialized in farm-to-table cuisine long before it became sought after. With a diverse range of vegetables, fruits, spices and herbs grown on our 17 acre property, much of what guests enjoy on Dasheene's menu each evening was likely harvested right here that morning. Chef Nigel is a native of Choiseul, and knows all of the best farms, fishermen and suppliers like family, including his own brother, who owns a thriving organic ranch. These ultra fresh ingredients are the secret to the exceptional flavor profiles on every plate and in every glass at Ladera.
